On a yearly basis, Josep Llorens selects underneath the cork oaks the best 100% Iberian acorn specimens’ pigs for the premium production. The premium ham has a limited annual production determined by the weather conditions, the quantity of acorn and the animal morphology. Therefore, every premium ham’s crop is exclusive and different, with organoleptic properties which make it special and unique, always with the Josep Llorens’ quality hallmark.
